Beaver is nutritious, delicious, and readily abundant, but it also tastes the closest to beef in comparison to other wild meats. It’s much more lean but the texture and flavor most closely resemble that of a beef cow. Beavers are highly abundant and yield a surprising amount of meat, so if you’re interested in adding another wild harvested food to your freezer, consider pursuing the flat tail. Make sure to research legal forms of take and season dates in your respective state before setting out!
